What's for dinner - Thursday!

Woo, peeps!

This has been a BUSY day. Not only at work but since I opened my eyes. I'm in the midst of planning this year's Bariatric Foodie Holiday Food Tasting and frankly it's a lot of work. But I do it cuz I love my people! See my OH profile for more information on the food tasting as I don't want to violate the TOS by posting too much about it on the boards.

Anyhoo...tonight will be the Y and swimming with my babies. I will probably have an evening snack (yes snack...concept which I do not understand) and then dinner later. Not sure what will be for dinner. My house is a hot mess, which does not inspire any moments of culinary greatness.

Here's what I've had today (carby as HELL!)

1. Protein oatmeal w/ Naturally More PB - altho this is carby I just did the stats. Way more protein than carbs although it is hella calorific!

2. A turkey and roast beef sandwich on pumpernickel.

All that fiber has me not very hungry but I know how this goes. If I push straight through to the Y, I will get ravenous as I leave, stop at 7-E and nosh on chicken fingers. So I'll wait a bit and have a snack.

I think tonight I'm going to try a baked alaska pollock recipe, some broccoli, & (brown rice for the hubby)


  • Alaska pollock fillets
  • 1/2 cup Parmesan cheese
  • 1/4 cup melted butter - (Going to use some olive oil instead for moisture)
  • 3/4 cup sour cream - (Sub. w/ greek yogert)
  • Salt and pepper to taste
  • Place the Alaska Pollock fillets in greased baking dish.
  • Spread on the Alaska Pollock fillets the mixture of sour cream, Parmesan cheese, melted butter, salt and pepper.
  • Bake uncovered 30 minutes at 350 degrees F or until fish flakes easily with a fork.

A little red beans and rice for me tonight. Not much rice in the mix, but I always need a little.

Not feeling very chef-y this evening, so I'm glad I have this as a frozen go to meal.

1/2 a salmon patty and about 2 spoons of peas.
