Freezable crock pot recipes???
I crave this recipe. I do a double batch and freeze half for another time. This is a Weigh****cher recipe. It calls for tortillas. It would be easy to sub for whole wheat or eat the filling without the tortilla. I have also eaten the inside on a salad. My kids love this.
Beef and Bean soft tacos
1 1/2 cups of beef broth
1 teaspoon chili powder
1 pound of flank steak
3/4 cup of tomato salsa (plus some for when you serve)
1/2 cup of black beans rinsed and drained ( I usually up this because I like the beans)
1/4 cup of fresh cilantro leaves( I leave this out)
2 Tablespoons chopped canned chopped mild green chilies
tortillas
sour cream( or Greek yogurt)
Mix the broth and chili powder in slow cooker. Add the steak. Cook for 4-5 hours on high or 8-10 hours on low
transfer steak to cutting board. remove all but 1/4 cup of the liquid. Shred the beef and return to slow cooker. Stir in salsa, beans, cilantro, and chilies. Coo****il heated. About 5-10 minutes
top tortilla with beef and bean mixture and serve with sour cream.
Sometimes I add baby spinach and cheese.

We LOVE flank steak in this house! Like you said, I have great low carb tortillas or could even toss this on a salad--sounds great.
