First Dinner Party Since Surgery

Tonight, my dear hubby and I (who has gone from about 208 to 185 in the 2 months since my surgery by supporting me... GO HUBS!) are having our first guests for dinner. They are originally from Mexico, so we always seem to have Mexican flavors, which are some of my favorites, but I'm ready for a change. They have 3 discerning children, too.

I'm making baked chicken parm with low sugar/extra veggies sauce, low fat mozzarella, and dream fields pasta on the side with a salad. Then for dessert, I have a Carrot cake off of bariactriceating.com that is made with almod flour and splenda. Let's see if they can tell the difference.... I'm excited!!

Sounds like fun.  Let me know how the carrot cake is.  I love carrot cake and have not had any since surgery.

It's exciting to find out we can make food that is good for us and actually tastes good, huh?

Well dinner was a success!

Of course, I ate the least of everyone, but I took 6 chicken breasts and cut them in half, and after 7 of us, we only had 2 pieces left of the chicken. The low carb spaghetti blew them away... and the carror cake. Oh, the carrot cake. So yummy!! It was a little dry so I may add some applesauce next time, but it's in an 8x8 pan with 9 slices, so ti's pretty huge servings. We topped it with whipped cream and my friend havier went back for seconds!

Eggface has a 5 minute one that you microwave and doesn't call for almond flour, so I'm going to try it next time.

And yes, Kelly --- so GOOD to know we can enjoy improved versions of our favorites still. Just this AM I made blueberry pancakes with whole grain mix and added protein. That with some turkey bacon just about made me feel like a normal human being! :)
