Need Quinoa for Breakfast Recipe!

I havent tried it in the morning, but just throwing some ideas out there..
-how about adding a little orange juice to the cooking liquid and add some diced fruit and a little yogurt?
- saute onions and green pepper, add your egg to scramble and your cooked quinoa, maybe salsa and a little dab of sour cream and/or cheese
- My daughters favorite breakfast is sauteed peppers, onions, Italian sausage and hasbrows all mixed together and topped with a fried egg. How about replacing the hashbrowns with the quinoa?
- You could probably throw cooked quinoa into any firttata recipe

I stir-fried cooked quinoa, zucchini, diced tomatoes, mushrooms, artichoke hearts
and feta cheese together. OMG. Sooo good! You could eat it as is or throw
it in a wrap.
I also had cooked quinoa and added half a packet of carb control oatmeal
with skim milk and cinnamon. MMM good.
My last one I call a Bundt cake bowl. 1/4 cup heart healthy bisquick (or
something similar), some cooked quinoa, 1/2 egg equivalent of eggbeaters
, vanilla, cinnamon and no sugar applesauce. Stir it up in a bowl and
microwave for a coupla minutes. It cooks and puffs up in the bowl like
a moist bundt cake. Eat it plain or top it with sugar-free syrup or
blueberries or jam etc. and a dollop of whipped cream. Delish
and soooo decadent tasting, but with a good bit of protein.

I had a co-worker who would mix oatmeal and quinoa together for breakfast. She said that that protein in the quinoa would keep her fuller longer than just oatmeal.
I would probably try making a baked rice pudding like dish... milk, eggs, sweetener, vanilla, quinoa, ground cinnamon, cardamom and a small dash of ground cloves. Blending lowfat ricotta into the milk/egg mixture might be a way to boost the protein content a bit too. Be sure to rinse your quinoa well before cooking it... otherwise it may be bitter!
