I AM STARVED!
Be thankful you get 1 meal a day! I had to have strickly shakes and liquid ONLY for two weeks, you can do it! This was one of the hardest things EVER, but you will make it and will be so happy that you did not cheat in the end. It takes lots of willpower to do this and you shold be very proud of yourself. Hang in there :) Good luck!
Yeah, optifast was hell. I had to do 3 weeks with no meals. It started to get a little easier in the last five days leading up to surgery. One thing that I can say is though I wanted to eat constantly, I was never actually hungry. Just push through it, you'll like the kick start in weight loss, and other than making the surgery easier to perform, it really serves to help you disassociate, to a considerable degree, from food.
You will totally do this, oh, and, have lots of baths. I thought that helped me a lot when everyone was sitting/preparing for dinner. All the best to you.

Yeah I remember that diet to shrink the liver. I tried to stay on it but couldn't.
I couldn't stand the protein shakes I had at the time, and barely stand them now. I GOT PERMISSION to follow the under 50 BMI diet instead.
Per my Dr: if BMI is over 50, which mine is, 1 meal heavy on protein with non starchy veggies and no sugar/carbs, the rest is protein shakes.
If under 50 BMI, 3 meals a day with sugars under 4/meal, high protein, carbs under 50-100 per day, low or no fat.
Please ask you Dr first. I had already kind of been following the under 50 BMI diet just with a lot of tuna and fruit instead of veggies. Also they double checked to make sure I had cut out all my caffeine, which I already had months before hand.
Your liver processes all of the same foods your stomach processes. It needs cleansing in order to shrink it. And it needs to be shrunk to get it out of the way for surgery.
If it is in the way, surgery may take alot longer, and increases the risk. Keep that in mind before you cheat. And good luck.
Side note:
Also I couldn't get away from protein shakes post surgery. And though I am in puree stage, still am rocking the nasty protein shakes to suppliment. If your willing to cheat now, consider what you may do after surgery. I'm worried that I test myself a little too much myself.

I was allowed to eat the 2 weeks prior to surgery but it had to be less than 30 carbs a day. I lived on egg white omelets. The first 3-5 days are pure torture and about 10 days into it was challenging again. I just kep telling myself that in just 2 short weeks my life would be so much different. Drink LOTS of water in between and keep your hands busy with knitting or putting together puzzles or scrubbing the bathroom floor; something. You'll be on the loser's bench with us before you know it.

My surgeon allows two protein shakes/bars and a small meal of 3 oz. lean meat, steamed veggies or salad with fat free salad dressing, plus three snacks a day consisting of a small piece of fruit. Fruit makes me feel yucky so I don't bother with it. Also allowed is UNLIMITED non-starchy veggies, so I made a soup with the veggies, low sodium bullion cubes, herbs and Old Bay seasoning. I have a half cup if I get to feeling hungry between shakes and meals. I usually put my 3 oz of meat in it for supper. So far so good!
I thought I was supposed to start my pre-op diet two weeks before surgery, or the day after Christmas. When I saw the surgeon the other day, though, he asked me to start it immediately. The only thing I have problems with is the protein shakes. I bought the wrong ones and am having to choke them down because I can't afford anything else at the moment. I have vanilla and chocolate. I am sprinkling a little chai spice in the vanilla to make it more palatable but it isn't helping.
I am also having issues with the unflavored Unjury. I have not found anything to mix it in yet that doesn't make me want to up-chuck! lol
