Sugar free baking w/almond flour?

I'm probably looking in the wrong place, but maybe somebody can direct me to the right place...... I am having a terrible time with reactive hypoglycemia (dumping, who knew?). I am to the point that if I eat much besides pure protein my blood sugar crashes within 90 minutes. I have also dropped too much weight. I have been working with my NUT, who agrees that something just isn't right and I have an appointment with an endocrinologist in 2 weeks.

I have been looking for low carb sugar free foods that aren't necessarily low calorie. I did come across a recipe for peanut butter cookies that are made with almond flour and splenda. My daughter went to the store for me to get the almond flour and it was a good thing she did because I probably wouldn't have spent the $10 for a 1 pound bag!!! Well, I made the cookies and they aren't bad at all and I can eat them without a problem. Now I am looking for other recipes. Anyone??

I made a SF pumpkin cheesecake with a almond flour crust for Thanksgiving.  It was pretty much all protein.  I can't find the reciepe but if you look you should be able to find something similar.

I have had lemon bars made from bariatriceating.com  they were good but made with whey low and almond flour.

The sugar is at whole foods.  I made christmas cookies out of it.. last friday i ate 2 cookies for a snack (holidays or i wouldn't have even made them because they are too tempting) and then got an email about 30 minutes later that the health department was at my work doing free blood sugar/blood pressure tests.. I decided to give it a try... blood sugar was at 117 and pressure was at 107/67.

 The package says it has 4 grams of sugar a teaspoon but it doesnt raise blood sugar.  I dump at 12 grams so i dont like to get close to that number.  I when i made the cookies i calculated the sugar at 7.5 grams a cookie. 

It's not recipes with almond flour but it may help make other things.

It's funny that you mention this because I was just reading a recipe last night that called for almond flour.  I don't remember where I saw the recipe but this is the website that it came from.http://www.elanaspantry.com/
I'm going to look around to see if I can find any that isn't too expensive around here.  According to this website Bob's Red Mill, which is near my house, doesn't have the best almond flour because it is too large.  She says the best way to buy it is online.

 Do you mean by "too large" that Bob's Red Mill is too coarse? I have found that it is cheaper on Amazon.com when I buy 4 bags. So far in the PB cookie recipe it is perfect.

Yes, too course.  I think she even mentioned that it is good in almond cookie recipes.

you can check ou www.comfybelly.com, she has alot of things made with almond flour, coconut flour, cashew flour....i have also been to the elanaspantry site and she has alot of ones also...
i have just gotten into trying almond flour, so have been looking around....and gathering receipes...i did try to make a cake out of black beans it was ok...not the greatest, but was ok...i tried to make a white cake out of navy beans and coconut flour, and that was way  NOT SO GOOD....went to the garbage right off the bat...

Shelly has a ton of recipes using Almond Flour, and hers all use sugar substitutes:

I've also read posts on her blog - she makes her own almond flour by just processing raw skin-on almonds in the food processor or coffee grinder. I haven't tried making anything with almond flour yet - I'm still on a just protein kick - but any of her recipes I have tried turned out pretty good
