What is your favorite Quinoa Recipe

just a side note, i had bought bulk quinoa..i was told you had to rinse it before using it...it has a substance on it that makes it bitter if you do not rinse it...i just now have some rinsed, now to figure what to do with it....haha...i like the idea of the mac n cheese swap....but think i gonna do the black bean one and maybe the oatmeal one for tomorrow morning since it is cold down here...

I substitute chicken broth for the water and cook according to package directions.  In another pan I sautee some chopped onion and mushrooms in olive oil and seasonings.  Then I toss the veggies, some cut up rotisserie chicken, and the quinoa together for a tasty dish.  I have added chopped broccoli, asparagus, or edamame sometimes as well.
