I was making my shopping list based on my list of Stage 3 foods and my NUT specifically says on this sheet, "Eggs - scrambled, hard boiled, deviled egg, pam fried - NO runny yolks until 3 weeks out." I'm no expert but since you asked I figured I'd pass on her rules :). My guess is the risk of food poisoning from undercooked yolk is bad so soon after surgery because it's harder to treat just like they don't like pregnant women eating sushi.

It's amazing how different, different DRs/NUTs plans are!! I'm still preop for about another week.. but post op, I will be on full liquid for the first 3 weeks. I won't be able to touch an egg (and even then a super mushy scrambled egg****il week 5!
If you can handle it and eggs are on your plan, give it a try. Yes, plans are very different. My doctor had us on soft foods since the begining. I was eating soft food in the hospital, no liquid or puree stage for me, thank goodness.
I was and still am not able to eat scrambled eggs (even in an omelet or quiche). My pouch is picky like that. I can do boiled, over easy and poached. The reason for not overcooking, is that it can become rubbery and then you may not be able to eat it.
