This is an excellent idea.  I am going to do this after my surgery.  When we cook, we cook for 4 adults, (including me).  What ever is left over I am going to freeze instead of throwing it away.  I love your mini-meatloafs.  Thanks for sharing the pictures.  I am so excited to try this.  I haven't even had my surgery yet, but I can plan ahead of time!

I use to do the same thing when I worked even though that was before I had WLS or a wt issue.  I also took one day a week to make casseroles for the month since they often used the same veggies.  This way I used all the veggies up before they could go bad.  It made it so much easier with 3 small children and a spouse that was often TDY.  Friday night was family night so I'd either make pizza, chicken nuggets or take the kids out.   When I wasn't working  and cooking each night, I'd take all the leftover pasta, veggies, etc. and make a poor man stew once a wk.  Mine are grown now and one asked for the recipe to that great stew we had once a wk.    I need to do a better job nowadays for I throw out far to much spoiled veggies and fruit.

I'm pre-surgery also and I can't thank you enough for such a great tip !!! All the information I can store ahead of time is appreciated.
