Vitamin C & Zinc

To help with the absorption of your iron, you need 200 mg C for every 30 mg iron. For instance, I take 75 mg iron so I take it with 500 mg C.
Take your zinc somewhere away from your iron. Doesn't matter when. I take my zinc with my morning multi. How much zinc to take would depend on your labs. Is your zinc level low? If it's not and you just want to take some temporarily because you're coming down with a cold or something, I wouldn't worry about how much to take. I don't think there is a certain amount that has been established to help with that. I currently take 50 mg zinc twice a week, because my zinc level was toward the low end of the normal range.

How important is it really to take all these vitamins daily? Is it only reccomended or it really needed and what happens if we stop taking them?
9 am: multi, calcium, B12
noon: iron, C, zinc
6 pm: multi, calcium
A couple things to note:
You need a third dose of calcium in there. We need 1500-2000 mg a day, according to the ASMBS, and can only absorb about 500 mg at a time. You could add a third dose at bedtime.
You could cut that vitamin C in half if you wanted, which would save you money. Won't hurt to take 500 mg but you only need 200 with that amount of iron.
It's super important to take the vitamins daily. If you miss a dose or two, nothing will happen. If you miss a lot, you'll develop nutritional deficiencies that can cause all sorts of problems, some serious, some merely annoying. Like, if you don't take your B12, you will get tired all the time. Eventually, you'll get nerve damage in your hands and feet.
