Need Something New For Dinner
Ok, I have literally eaten Nik's Taco Casserole for dinner just about every night for months and months. It is the only thing that sounds good. I make double and triple recipes and freeze up all the extras. The problem is I hate to cook. And nothing else sounds good to me. I have containers in the freezer of different kinds of chili I have made and other things but nothings sounds good to me except the Taco Casserole. I really thought I would be sick of it by now but I'm not. I put it on a tostado with sour cream.
Does anyone have any other ideas of easy things that I can make and freeze up? The Taco Casserole is easy enough, I just don't like to cook. I have looked through Bariatric Foodie and Eggface for other ideas but nothing else sounds as good.

Today I went to the fish market and picked out a fish, and had them gut and clean it. Unfortuantely I chose to let them deep fry it, but I ate half of the fish for lunch, and the other half for dinner, and I had a plantain with it. You could just slap the fish in a pan and saute it.
I have immitation crab salad from the grocers, and I often go to Trader Joes and get prepared foods. Ie. Fish Nuggets you get like 4 or 5 for a little under 200 calories, and I think like 13 grams of protein. Trader Joes also has Tofu Edamame Nuggets 5 for 200 calories something like 11 grams of protein.
Both of the aformentioned are a lil carb heavy but also a decent amount of protein.

When I was newly out I ate a lot of chili. Tasted good, I craved spicy, and went down easy. It was also easy to eat a little bit, put back in the fridge and finish later. Easy to pack into single servings and freeze the extra. So it worked out. Then I moved onto chicken breast stir fry with veggies of choice. That worked out even better. Tastier, could be spicy or mild if I chose. Veggie variety helped a lot. Easy to make a batch and freeze in portions. See a trend here? lol. I think I made a lot of stuff and froze it in portions. I even did that with my homemade yogurt. Froze it in portions and thawed on the night before I planned to make it breakfast. Then once thawed I added my choice of fruit and/or davinci/torani sugar free syrups. Had some great combo's tool. Especially the eggnogg and the pumpkin spice. Great during the holidays.

I love anything to do with tacos! Mexican food is my favorite, is there somewhere I can find the Taco Casserole recipe you're talking about?
How about making a batch of chicken enchilada filling? That should freeze well too.
Do you like chicken stew? I make one that's tomato-based and super easy to make. I use the chicken tenders lightly floured and throw them in a pot with a little olive oil to brown them, and then just dump in boxed chicken broth, a 24 oz can of crushed tomatoes, onions, and I normally add potatoes and corn, but you can really put in whatever veggies you want. Just the chicken and onions would be really good, which is probably what I will do after surgery. Add a little salt and pepper and garlic powder, (and of course any other spices you like) and there ya go, yummy homemade chicken stew in under an hour. It's similar to Brunswick stew, which is really good and again, freezes well.

LOL I like that eyes bigger than stomah and I am with you there. ok wife has throw together something I normally would have hated but it's actually good and simple kidney beans rice and rotell spicey tomatoes. cook and serve it's really good and I HATE RICE. but I actually have started to request this meal. You can even include chuckys of chicken breast
