Bored
My weight continues to come off, helped no less by my not being able to eat many foods. I still can't eat meat or fish and have to get my protein mainly from dairy and eggs. That's not being too bad, but the biggest problem I have right now is extreme boredom with my diet. I've been wanting Italian food lately but can't eat pasta until October, even whole grain pasta. So I went out today and bought myself a spaghetti squash and some low sugar spaghetti sauce. I hope this will help relieve the boredom and the cravings I'm having for food I can't eat yet while still eating healthy. I am trying to stay busy but as time goes on its getting harder to distract me from my cravings.
Does anyone have any other tips on ways I can combat the boredom?

If you want Italian food, you could try ricotta cheese with spaghetti sauce and some grated parmesan. I just nuke it. It tastes like lasagna but without the noodles.

Spices and flavorings!
I know someone had posted a recipe for a Ricotta Bake--basically lasagna without noodles. I know I'd be all over that! LOL
As for other ideas, I've been looking at various websites for recipe ideas, and making sure they either are high in protein in half a serving (most servings are a cup or more), or if it's something that I'll be able to add unflavored protein powder to it. I usually go to eatingwell.com or vegetariantimes.com. Sometimes I'll check out allrecipes.com and foodnetwork.com for ideas too.
Dont forget you can get some protein from tofu, beans, etc. Hope that helps!

Before surgery I sometimes made a version of ratatouille--spaghetti sauce with eggplant and zucchini, made very thick so it didn't need pasta. Olives and onions are good in this, too. If you like peppers, they'd be a nice addition.
You can also slice zucchini and eggplant into planks or rounds and bake with sauce on top, like little pizzas. I'm not there yet post-op, but it sounds goo-ood.

We had surgery about the same time. My was April 9th. I recently tried a spaghetti squash because I was craving Italian too. It didn't go down so well. Even though it was very thoroughly cooked, it was just too stringy and I had problems with it. Also, it really didn't calm the monster demanding italian cuisine. Hope it goes better for you.
I sautee zuchinni that I have cut into spagehtti size pieces in just a bit of olive oil, black pepper, and garlic. I use that for my "noodles" it is very tasty. I sometimes put a piece of baked chicken with some low fat cheese on it with the sauce for a lighter parmesean chicken. I love it because you do not get that bloated feeling from all the carbs in real pasta.
i make pizza chips all the time..crustless pizza...i take what ever pizza toppings we like, ham, turkey pepperonie, regular pepperoni, beef crumbles, italians sausage crumbles, onion etc..mix in mozz cheese, parm cheese, and what ever chesse i have on hand..i add in oregeano, garlic powder, italian seasoning, onion powder...and mix it all up...spray parchment paper and then make mounds or globs of the cheese mixture and melt...dunk in pizza sauce..i have eaten them cold too....just like pizza without the crust..
