Pumpkin Protein Pancakes - Yum!

Good morning all!  I took a mental health day (much needed) from work today, and was in the mood for something different for breakfast.  I went searching around online and came upon this recipe for pumpkin protein pancakes:

1 scoop protein powder (I used vanilla)
1/2 cup pumpkin
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp ginger
1/4 tsp nutmeg
1/2 tsp baking powder
1/2 cup oats
2 egg whites
1/2 cup water
4 packets stevia (or sweetener of choice)

Blend all ingredients in a blender/food processor & cook on griddle. 

These were SO GOOD!  This recipe made 6 medium size pancakes for me.  I hate 3 of them (1 w/ peanut butter and 2 with sugar-free syrup) and I'm stuffed!  Just had to share.

One of my support group friends spoke about protein pancakes at a recent support group.  She posted her recipe on our Facebook group. This recipe uses 1 cup low fat cottage cheese, 1/2 banana, 2 eggs. 1/2 tsp baking powder, 1 1/2 tsp Truvia, then mix. Add 1 cup Quaker Quick Oats, 1tsp vanilla, 1 tsp cinnamon, and 1 tsp pumpkin pie spice (optional).  Measure 1/4 cup per of batter per pancake for portion control.  She mixes her ingredients in a Vitamix.  She said she usually mixes a "double batch", cooks them, and then freezes them. Take out a couple, microwave, add Sf syrup, peanut butter, sliced banana, etc.  She said she thought BREAD was her big issue in her wt gain before surgery.  This satisfies her urge for bread. She commented she craved a PB & J sandwich last week. She took out a couple of pancakes, microwaved them, spread thin layer of SF jam and peanut butter, to resolve her craving.  I intend on trying these sometime this week, trying some added unflavored whey isolate protein to 1/2 cup of the recipe to compare the taste and consitency between between the 2 versions.  I made these the other day!  I found the recipe on Pinterest.  The same blog had one for pumpkin protein muffins...which were delish!   Thanks for sharing!

 Giiiiirl, not as excited as the divas!

I'll tell you one thing I heard of that I am thinking of including.  A friend wrote me and says she uses a pumpkin based sauce instead of tomatoes for her ricotta filled homemade raviolies! Obviously I'm not going to make ravioli (or eat it...me and noodles don't get down like that) but I was inspired to come up with some savory ideas.

I have made and liked pumpkin chili so that's on the short list. I am accepting suggestions!
