I did it! My first recipe
RNY on 08/17/12
Two-bite Protein Banana Muffins
3 ripe Bananas
1 egg
¼ c Torrani Sugar Free Salted Caramel Syrup
¼ c Almond milk
2 Tbl Sour Cream
2 Tbls Oil
1 c Vanilla Protein Powder
1/3 c + 2 Tbl Almond Flour
1/3 c Spenda
2 Tbl Ground Flax Seed
1 tsp Baking Powder
½ tsp Salt
1/3 c Oats
1 tsp Cinnemon
1/3 tsp Ginger
Preheat oven to 350.
Put all the dry ingredients in a bowl and whisk together so they are well blended. In another bowl mash bananas; then add the egg, syrup, milk, and oil. Mix together with beaters and slowly add the dry mix. (Batter will be quite soupy but that’s ok. Protein powder bakes drier than flour so you want it to be moist)
Fill muffin pans to 2/3 and bake for 8 min.
This was my first attempt. I think for next time I might add another egg and make sure I have muffin liners for the pan. Other than that, they are quite splendid ... if I do say so myself!
