I pureed mainly meats which won't work for you right now, trust me I had all my upper teeth pulled several years ago at Christmas. I found soups to go down best as well as cold things (milk shakes and ice cream back then) Can you make some protein ice cream from one of the recipes online? the cold will also help numb and make the swelling go down. Perhaps use some ice in a blender with your protein shake to make it more milkshake like?
You could also puree meat, beef or chicken to mush and add it to broth so that as you are drinking the broth it's a bit thicker and getting in the meat?
You've already got some great ideas for cheese etc but the back and forth from hot to cold helped my gums kind of like rotating heat and ice to a sore muscle.
