Made so many different meals with chicken kabobs

Sunday night my mom was in town so we decided to cook out. I bought some chicken breast and cut them into chunks and marinated them over night with a Hawaiian marinade. Then we added bell peppers, onions, mushrooms, and cherry tomatos. We had alot of left over chicken pieces so we made a few just pure chicken kabobs. Im so busy with school that I cant come home everynight and cook. Which was one of the reasons pre op I found myself stopping at a fast food restraunt on the way home. It was quick and easy. Well my new favorite thing is left overs! Its so weird because I hated them before. Now I just like to have things ready to go when I need to eat. So I love meals like this where I can cook once and have a few different things. just wanted to share

meal 1 - was the kabob

meal 2 - I just took a few of the chicken pieces and threw them on top of a salad with some cheese and cherry tomoatos and italian dressing

meal 3 - shredded some of the chicken added some celery and onion and made up some chicken salad

meal 4 - pulled the chicken and veggies off the kabob and put in a pan and heated up. then I added a piece of swiss cheese on top and let it melt. kind of had a fajita thing going on.

I am glad someone out here likes chicken!   Can't do chicken, can't stand hamburger.  I can do steak, roast beef, prime rib for some reason that type of meat is no problem, but I don't eat red meat that often.  Prefer to get proteins in other ways.  But the kabobs sound good though!   Jane

That sounds like a great plan and sounds tasty. However, I'm not tolerating chicken too well.
