Lean Cuisines and Smart Ones are great. Just make sure to check labels for protein, fat, sugar, etc. If you don't know how to read the label you need to master it now. Its a lot easier postop if you know what you're looking for.

It's hard cooking for one person, who eats so little. I feel ya. I am almost 2 months out too. I eat frozen chicken veggies fish shrimp. I did find one "smart ones." It's breakfast scrambler. It had only 13 carbs only one gram of sugar and 23 grams of protein at 200 calories. It's ok for when I don't have time. Btw I need to buy a crockpot!

I have done the atkins meals low in carbs but high in fat and high in protein which is good! I also have done jimmy dean flatbread sandwiches which have like 12g protein something like that.. otherwise an easy recipe is mini egg quiches.. mix any meat u want, veggies, cheese, and eggs or egg whites poured on top in a muffin tin pan.. they are filling, full of protein, can be suited to however u want them, and u can freeze some!

I'm a teacher too :) I was also worried about what I would bring for lunch but the World According to Eggface Blog was so inspiring.  http://theworldaccordingtoeggface.blogspot.de/2010/05/my-bento-lunch.html  

I bought myself a bento box and look forward to packing it full of healthy goodies to take with me to school.

I eat lean cuisines and healthy choice for lunch quite a bit for lunch at work. I wouldn't make a habit of eating them 2 meals a day, but one meal a day for most of them is not bad. I won't eat one that has less than 15 grams of protein.

I don't particularly like to cook, so I tend to cook soups or stews on the weekend and reheat through the week; best thing to do is double up the recipes, and freeze half. That way, some weeks I don't have to cook at all
