WOW look at your ticker - you have done amazingly!  I have seen some recipes for mashed cauliflower with cheese and will check that out when I get to that point in post-op.  Looks like you are still eating really really well 2.5 years out.  What an inspiration for the rest of us newbies :)

Hi ChristinaLee! I love turkey bacon too :) My friend just have me this weird contraption where the turkey bacon hangs over this plastic stand in the microwave and cooks up crispy. I haven't tried it yet but I will have to report back :)

I was also struggling with fluids at first and then I read a super scary article about why the fluids are important - staying hydrated will reduce the amount of excess skin you have (as will exercise) and also can help you avoid gall stones, I believe.  I was like "sip, sip, sip"!  So now I drink when I roll over in the morning to turn off my alarm, drink on the bus to work, drink all day...I have a 20 oz. bottle that I make myself finish between lunch and dinner, plus one between dinner and bed, and the other 20 ounces are in the morning and in protein shakes.  It's the only way I can do it :)

I'm impressed that 20 months out you are only at 600 calories still!  I feel like most people get to about 1,200 once they have reached goal, in order to maintain.  Do you ever go over 600?  I am alwys curious what others' experiences are!
