A super delicious turkey meatloaf recipe

Today is a snow day here in DC (kind of a joke since we have gotten about two inches of snow) but that means I had time to cook :)

I made a modified version of one of my favorite foods - turkey meatloaf!  It's really easy.

Ingredients:

1/4 cup of raw onion

1/4 cup of bread crumbs

1/4 cup of light shredded cheese 

2 tbsp ketchup

2 tbsp mustard

2 eggs

20 oz package of 99% fat free ground turkey

In a small frying pan, spray pam and cook the onions along with whatever spices you like (red hot pepper flakes, garlic salt, pepper, whatever).  Let them cool a bit, and combine all ingredients into a big bowl.  Ma**** up together, spray a bread pan size pan with Pam, put it all in the pan, and bake for an hour at 375.

If you cut it into 5 servings, each piece is quite big and has the following nutrition info.  This is more than I have at one meal, so I will likely make each piece a meal and a snack.

270 calories

12 g fat

12 g carbs

32 g protein!

And it tastes awesome :)

So far today I had 4 mini crustless quiches I made yesterday, and 2 oz of tuna for lunch, so I feel ok about this as dinner.  Stay warm!

Sure!  I just posted it the other day.  I got the idea from the blog World According to Eggface.  Her recipes are to die for!

 

I just have to share - I made the MOST delicious crustless quiches!  I got the idea from the World According to Eggface blog (which is incredible and you should go read every single page lol).  But I had some leftover bacon, some onions and shallots, goat cheese, and egg beaters, so I whipped up 24 mini crustless quiches (I bought a tiny cupcake tray that has 24).

Ingredients:

1.25 cups egg beaters (equivalent of 5 eggs)

5 slices of bacon

.25 cups onions and shallots

3 oz of goat cheese

1 tbsp of olive oil

Salt and pepper and a little red hot chili pepper

Cook the shallots/onions, let them cool.  Rough chop the cooked bacon.  Add all ingredients except cheese to a bowl.  Pour into greased (with Pam spray) cupcake cups.  Add a few crumbles of goat cheese to each.  Bake at 350 for 30 minutes.  Each one (1/24 of the recipe) has the following nutrition info:

27.5 calories

1.6 g of fat

.4 g carbs

2.5 g of protein

It's the perfect snack food or you can have a couple for a meal.  I pop 4 into the microwave for a very filling breakfast.  The World According to Eggface blog says that they freeze well in a Ziploc bag :)

Did you use sugar free ketchup and make sure your turkey did not have the skin ground into it? I wonder if there is something other than breadcrumbs, like pulsed oatmeal, that would have a bit more nutrition tied to the carbs? I know for me, 12g of fat and 270 calories would not be happening, but wonder if you can't lower it with a different turkey choice?

Also, have you considered measuring out the volume you eat and baking it in cupcake liners?

I know what you mean-this is the highest carb thing I have eaten since surgery. I cook it in a big loaf but I will weigh each portion on my kitchen scale and portion out lunches and dinners for the next few days. I think this might be my version of comfort food while trapped inside in the snow. I am always using egg beaters instead of eggs, light cheeses, never breadcrumbs...but I felt like I had to have this today :) I will have to consider pulsed oats. Or maybe even use 1/8 cup of breadcrumbs. I've only had 250 calories of food so far today so I just need to make sure the rest of my day is very low cal and lean.

I made one yesterday with oatmeal. We did it this way when I was a kid. It turns out great. I also used some salsa instead of ketchup.

That sounds great! When I get back on regular food I will have to try it.  I also love anything BBQ'd.  Ribs especially.  I hope I will be able to eat those in the future.  I don't know if I will be a dumper or not.  Sweet BBQ sauce may be out but I could vinegar base it.  Stay warm we are expecting snow here in Western NC tonight also and boy is it COLD!
