Plain Greek Yogurt instead of Eggs or Milk ?!!

I am a bit obsessed with not eating certain foods, even a little amount. I live alone so don't buy things that I will not use, like sugar, flour or breadcrumbs.

As an egg substitute, I soak one tablespoon of chia seed in two tablespoons of water for at least an hour.  It breaks down into a gel that works like an egg for cooking or coating.

I would also try the Greek yogurt in place of milk and see what happens.

Ground flaxseed might satisfy you as a breading.

I just experiment and see what works for me.

Never tried flaxseed, what is the flavor comparable to ??

What about using something like almond meal in place of the bread crumbs? Or buzz up some pecans in a food processor and use those? I've seen pecan-crusted chicken and fish dishes on restaurant menus before.

Or, make a loaf of low carb bread using almond meal and then use crumbs made from that?

Hrmm, sounds like I have some tinkering to do in the kitchen!
