What's on the menu today, RNY-ers?
I am eight weeks post-op as of today! So far, I would say the keys to my success are (of course) making good choices, as well as MEASURING, planning, and eating low-carb. I am down 46.8 lbs in eight weeks, and pretty ecstatic!
Here's what's on my menu today, and please share your ideas! This daily thread has so far given me recipe ideas as well as tips/tricks like putting yogurt in the freezer 30 minutes before you eat it so it's almost like frozen yogurt, making your own cheese crisps, and more!
B: 3 World According to Eggface (amazing blog) egg bites - made with chopped up cooked bacon, goat cheese, crushed red pepper, egg beaters, and shallots. 3 are 169 calories and 20 g of protein
L: 2 oz of grilled chicken leftover from Sat night dinner, mixed with 1 tbsp of light mayo, on two cheese crisps for 155 calories
S: One hard boiled egg before the gym
D: Leftover Chipotle burrito bowl from last night (ate some last night, have 3 leftover meals) of chicken, a little guac, a tiny bit of cheese and sour cream, and some fajita veggies.
E: 2 miles on the treadmill at 3.0 mph at the end of the day
V: On track but almost out of calcium citrate so need to order more. The ones I have taste delicious but have carbs. Looking for new vitamin ideas!
Totals for the day will be 655 calories, 63 g of protein, 39 g of fat, 17 g of carbs. I have a follow up appointment tomorrow so I will ask my NUT if my fat content is too high.

AWESOME on the loss to date!
I am having a Caramel Pretzel shake for breafast, crab legs and a baby bel for lunch, mockzanya for dinner, planning on one Quest bar for a snack and 10 almonds for another snack.

Thanks, PetHairMagnet! What is mockzanya? I am intrigued! You are 18 lbs from goal!!! Holy crap, that's amazing!
Mockzanya is lasagne without the pasta in it. We have it once a week as a 'fresh' meal and once a week as a leftover. By then, our 18 year old has finished off any leftovers. :)
If you PM me your email, I will be happy to send you a list of the recipes I've made with input from the foods to eat from my nutritionist. Not anything earth shattering, but feeding us healthy for the past year in a double bariatric household and a son who has no idea we had surgery and enjoys the food I make, too. :)

Snow day today so I think I'll cook again. Sunday is usually my prep day, but today I'll add a bit more variety.
B: egg white omlete with center cut bacon, cheddar, & a sliced tomato
L: something with chicken
D: meatloaf YUM!!! This is about the only way I can eat ground meat.
S: Either a greek yogurt, cottage cheese, or maybe an apple with peanut butter
I make an awesome turkey meatloaf that I love too! I use the 99% fat-free ground turkey but it's pretty moist. I can also use ground turkey and add taco spice and some shredded cheese, or make it and add italian seasoning and some marinara sauce. I had a few bites of PF Change lettuce wraps (made with ground chicken) and they were totally delicious too :)
I've been meaning to try the cheese crisps. Love cheesy things!
B- protein shake

I see people putting up such great protein numbers - I need to up my protein for my calories, I think! I will ask my NUT tomorrow :) 78 g is awesome. I bought Kitchen Table Bakers brand cheese crisps at Wegman's but they are something like $5 for 18 crisps. Well, now that I say that, I guess you would use at least $5 of cheese to make 18 crisps. But they have different flavors. I have the jalapeno parmesan crisp here at work. The ingredients are: pasteurized part skim milk, jalapeno, cheese cultures, salt and non-animal rennet. Not sure what rennet is lol. They are so delicious and probably the only crunchy thing I eat! 3 of them have 80 calories, 6 g of protein and 2 g of carbs. I usually eat two with some tuna salad or chicken salad for lunch, and get full. It's nice to feel like I am having a "cracker"!
Rennet is an enzyme, it's what turns milk into the yummy deliciousness that is cheese.

I am not stalking you, I promise...but you can make AMAZING cheese 'crackers' with a slice of Kraft cheese, parchment paper and your microwave. 1 slice of cheese = 6 crisps and they keep very well!
