What's on the menu today, RNYers?
OUCH! 6 months without chicken...I don't know if I could do it! Chicken is definitely the densest protein I have had and I prefer white meat so if it's dry it has given me some mad foamies a few times. I do well with ground turkey, ground chicken, veggie burgers, shrimp, LOBSTER (though can't afford to eat it often!) and other white fishes. But I do eat a ton of chicken. Maybe if you have it in a sauce? Or as you say, you can follow your doctor's instructions :)
Roasted kale chips are a weakness of mine too! With crushed red pepper flakes yummmm. I bought a Misto (a thing you fill with olive oil and then it comes out in a fine aerosol spray) so I just spray that kale and season it up and bake it. On parchment paper so there's no clean up :) Your totals today are awesome...way to keep it under 500 calories!
I couldn't do without chicken at this point! I'm a carnivore, through and through! I was even a bad girl and even advanced myself to include beef occasionally...yes, I know, I know, follow the doctor's orders, but I make sure to chew it until it's totally mush and only use tender cuts or ground beef. (Note: Do NOT take this as my recommendation to do the same thing, anyone!)
Anyway, I went to Whole Foods and picked up a beautiful sirloin for tonight and a gorgeous piece of halibut for tomorrow. While at the seafood counter, the girl told me that Friday they'll have lobster tails for 4.99 a pound!! I'll definitely pick up a few and freeze the ones we don't eat over the weekend.
Kale chips...I need to try these. I'm missing textures at this point, especially crunchy. Something crunchy/savory would be great.

Try tofu. I buy the med-firm, put it on paper towels, then a couple of plates on top to squeeze the moisture out. Do this rather than buy the firm as the texture is different. Slice the tofu into about 1/2 thick slices, dredge in beaten egg (I sometimes add a bit of Thai sweet chili sauce to is), then dredge in parmesan cheese that has been mixed with some italian spices. Spray a pan with oil and fry the tofu in it until crispy. If you will do a bit of bread, mix some panko crumbs with the parmesan mixture. Cook till golden; you can oven back on a rack, just spray a bit of pam on the top of the tofu instead of turning it over. You can create any flavour you want with the tofu by doing this. And they have tofu fish as well, but I have not tried that..........
Thanks for the great suggestions everyone! I am a little bummed due to the fact that I LOVE chicken. But I figure its only 4 months, I can do anything for 4 months, right? Plus I really like all types of fish and shellfish so I think I'll have enough variety.
I will be trying the tofu as well. That reminds me of a recipe I made a few years back where I turned tofu into eggsalad using spike seasoning from whole foods. It was from some fad diet I was trying at the moment. I remember the diet wasn't great but that recipe sure was and I was amazed at how the tofu completely transformed in flavor. Your recipe sounds delicious so I will be trying that soon as well. Thanks for the tip momjan!

Daisy - awesome protein numbers! I am impressed how much you walk without even exercising!!! Spicy thai sauce...god, the problem with reading these posts is that I flip flop...I was all set to have ground turkey and now I want Thai ha ha. I am having thai for dinner tomorrow night so I will order the chicken skewers (already scoped out the menu)!
