Darn you egg
I was totally grossed out by the idea of EggBeaters, and am still not entirely sure what they are, but I made myself try them and they really are good and taste like regular eggs as far as my palate is concerned.

I can eat eggs cooked every way I've tried them. This morning I made taquitos for the fam. Eggs, chorizo, and shredded white sharp cheddar. Heavenly. ( and lots of cayenne in my hubby's. )

I do best with hard boiled eggs - chopped and added to salad with other veggies and cottage cheese. Salad Dressing & moisture of cottage cheese helps. Scrambled often doesn't stay down. I can eat yolk from eggs over easy because of moisture and no grease.
I don't eat much meat, so boiled eggs are an every day food for me. I choose organic eggs from friends who have free- range chickens fed organic feed & vitamins.

Penny I do boiled eggs with no problem also and it's my usual egg choice. All the over easy juicy eggs (my kid's term) is making me think of fried egg sandwiches which would be dangerous and I'm sure painful to eat.

I had a really hard time with eggs for a while after surgery. Now, I eat one every morning, but if I get anything stuck this far out from surgery, it is usually an egg, chicken, or broccoli. I got broccoli stuck Friday night and was in misery. My surgery still puts me in my place even at over 10 years out.
When I scramble eggs, I just have to make sure they are scrambled in itty bitty pieces and then chew, chew, chew. Fried eggs are easier on my tummy. I bought a microwave thingy at Walmart for cooking eggs. It fries an egg pretty well.
