Hi everyone! Hope you all find yourselves in good health...seems like some of the regulars have colds and sinus infections :( My non-doctoral advice is to keep up with your fluids :)
Thanks for the ideas yesterday for something to bring to the shower Saturday. Deviled eggs it is!
I went a little off plan yesterday and after the gym I got a pedicure and went to dinner with a friend and my calories were a little high. I felt pretty disappointed with myself but I vow to do better today. I feel so great, I don't want to jeopardize this early honeymoon period!
Speaking of feeling great, you all know how obsessed I am with Gwynnie Bee, the monthly fee for "rental" clothes I use? Well today I am wearing this super cute shirt that just came in the mail. LOVE it! Attaching a pic. Feel free to also attach pics everyone - I love getting to "know" you via your posts and pics just add to it! (PS These are $20 pants from JC Penney and this is a rental shirt - feeling pretty proud of my budget wardrobe lol) Why is it sideways, OH? Sigh...

L: If it hasn't gone bad, then some leftover doner kebab chicken and tatziki from Mon. Though, as I write that, I feel like that is a bad idea! So maybe I will run down to the deli and have turkey and bacon in a lettuce wrap

I am at 500 calories and 51 g of protein. Have a small work dinner tonight and I am hoping for sushi. Sashimi is my best meal as far as no carb, low fat, and HIGH protein.

sigh... Not a good day for me so far. I just can't figure out what I want for breakfast let alone the rest of the day. I keep looking in the fridge and nothing is saying eat me! I've taken my vitamins and drank fluids so far. I made a protein shake and it is in the freezer. I like it slushy. I will start with a shake then I don't know what I'll do.

Sorry nothing is appealing to you. As long as you have protein and water you will be good. I am making the trek to Trader Joe's tomorrow so I don't find myself with no food this weekend!
Ok. I came around and got it together to plan my food for the day. I'm not sure why but my appetite is not here today. I started out with a protein shake to make sure I get my protein in today. I am looking forward to grilled steaks for dinner. Now that sounds yummy. I think part of my problem was laziness. I just didn't feel like bothering to cook anything for me this morning and that set me off.
I did have a weight loss this week so I'm very excited about that. My calorie count has been higher the past couple of weeks not sure why but it is. I'm still losing steadily so I will leave it alone.
Oh boy my hair... Makes me want to cry but I'm doing everything I can. Vitamins, water, protein... Just have to let it run it's course but I'm not sure how much more I can lose. I wear it up to hide how thin it has gotten. I bought a couple of hair pieces yesterday to make my hair a little fuller. I will probably even be looking at wigs soon....:'-(

OOoh your menu looks awesome and we are almost surgiversary sisters and you are in the 100s!!!! SO AWESOME! I am sorry about your hair...I actually forgot to mention that last night while I was conditioning the ends, I realized how little hair I was holding in my hand. Thank god I started with a ton of hair so even though it has thinned a ton, I still have some. For now. Oy. I hope the loss ends soon for you :( Just keep in mind that it will grow back. Everyone says it grows back.
PS Isn't the Syntrax mint cookie protein powder AMAZING? I love having it for breakfast. When I don't have it, my protein numbers suck for the day.
Good morning, no sickenss here thank goodness. I have tons going on with my son getting ready to graduate and don't think I could handle being sick on top of it. Sorry I didn't back on yesterday with the enchilada bake recipe. The grandkids came over after work yesterday so I didn't get time to make it and the husband & I ended up eating leftover taco soup after they went home.
That top is absolutely adorable, I keep telling myself not to buy any new clothes until I get this regain off.

B: Old standy; 2 Eggs with cauliflower "hash browns"

D: Enchilada bake, side salad
S: Jerky, string cheese, protein shake

Now the recipe for Low Carb Enchilada Bake:
Crust:
4 ounces cream cheese, softened
2 eggs
1/2 teaspoon taco seasoning
8 ounces cheddar cheese, shredded
1/4 ounce tortilla chips, finely crushed
Beat or whisk the cream cheese and eggs until smooth. Add the seasoning; mix well. Stir in the cheese and crushed chips; mix well. Grease a 9x13" baking dish or line with parchment paper; spread the cheese mixture evenly over the bottom. Bake at 350º, 35 minutes or until browned, but not too dark. Let stand 5-10 minutes before adding the topping.
Topping:
1 pound ground beef
1 T taco seasoning
red enchilada sauce (about 1 cup)
8 ounces pepper-jack cheese, shredded
Brown the hamburger; drain fat. Stir in the seasoning and enchilada sauce. Spread over the crust. Top with the cheese. Bake another 20 minutes or so until hot and bubbly.
Mmmm....this recipe does sound yummy, but I don't think I can ever make it! Well, maybe if I stole some tortilla chips from someone to bring home, but I know I can't have them in my house - just too much temptation for me and I don't truly trust myself yet. LOL. I live alone, so having a whole bag would call to me I think.

Jennifer - this recipe sounds incredible! I think I could try it with ground turkey, though I am with Anny - I will need to steal 3 tortilla chips from someone's house and not buy a bag! Thanks for sharing with us.
I do love seeing what you eat 11 years out. You are making really good, high protein dishes so I can't wait til you are posting however many months from now to tell us you have lost your regain!
