What's on the menu today, RNYers?
Hi OH friends,
Damn these forums are quiet these days, aren't they? I feel like I used to get a lot more information and now it's more questions than anything :( Well I am always happy for this post - getting your ideas and getting inspired by you.
My stall/plateau/slowdown is finally over...the scale moved today. I knew it would but it still made me extraordinarily happy!
So many of you know that my only true food sadness is pizza. I can live without all the other stuff I have given up, but I really miss pizza. Well, this weekend I made cauliflower pizza crust! And it is awesome! And I had a "piece" of pizza!!!! I found the recipe here Cauliflower Crust Pizza and you literally only need a head of cauliflower, two eggs, 1/2 cup of shredded italian cheese and spices (oregano, basil, garlic powder, crushed red pepper, salt, etc). It was sooooooo good! A head of cauliflower made me seven little individual pizza crusts. 3 are in the fridge for this week, and 3 in the freezer. So guess what's for dinner tonight :)
Ok, here goes:
Time Since Surgery: 5 months and 3 days
B: Syntrax mint cookie shake made with unsweetened almond milk and a 10 oz coffee
L: 3 oz Trader Joe's balsamic vinagrette chicken, 1 oz goat cheese
S: Nothing planned but I am gonna need to have one before the gym
D: Small pizza crust with 1 tbsp pizza sauce, shallots and tuna and cheese topping
E: My trainer was out of town for 5 days! He is back so a 50 minute training session and then treadmill for 30 minutes
V: On it
W: Not usually a problem
Without a snack, I am at 632 calories, 73 g protein, 21 g carbs, 28 g fat.
What's on your menu today? Hope you all had a great weekend!
B - Premiere Protein shake
S - Greek yogurt, caramel machiatto, with granola
L - Chicken salad
S - Maybe Greek yogurt with SF strawb preserves and granola
D - leftover caprese salad from dinner out last night, yum, I have enough for days!
S - My own little mix, roasted cinnamon chickpeas, soy nuts, raisins, salted almonds. 1/3 cup

Hi Joan! Mmm caprese salad! Well, I love those chunks of mozzarella :) You and your chickpeas...they look pretty delicious with the nuts! You have such a good menu for 7 months out!
ETA: HOLY CRAP! You are seven months out and only single digits away from goal!!! Way to go!!! So freaking impressed!!!!!!
Can you talk roasted chick peas to me? I tried the other night and ended up with weird yucky, chewy chick peas....

I set the oven to 375, put them in for 20 mins. I then take them out, make sure that they are not sticking to the pan, and then back in the oven for 20 more mins. Then I take them out again, shake them around, and back to 20 more mins. After that I take them out and test three diff ones from three diff areas on my pan. I then put them back for 10 mins at a time, consistently taking them out and testing.
It is not foolproof, but it works for me. Hope this helps!

Are those a Whole Foods thing? I was looking for roasted chick peas the other day at both Trader Joe's and my regular store and couldn't find them!

I get them at my local Whole Foods. If you go to the Saffron Road website, there is a store locator function, that may help you find them near you. Or you can order them online from companies like Vitacost, etc.
They are definitely yummy! I love the Falafel version, although I'd like to try the Korean Barbecue version they're not carrying it yet in my local WhoeFoo. They don't do a sweet version like the Splenda/cinnamon version I've seen, but that's ok, I usually want umami more than sweet anyway.

Pam, where do you get these? What grocery chain? I am going to the States in a few weeks and I have a "shopping" list of things I want to pick up down there that I can't get up here in Canada! They look awesome, and I love chickpeas and crunchy foods!!
