Miss Pasta????
Try this. I created it last night to go with my Shrimp Scampi.
2 Cups of Cooked Spaghetti Squash
1 1/2 Tablespoons of Butter
1 1/2 - 2 Tablespoons of minced garlic
1 1/2 - 2 Tablespoons of chopped parsley
1/4 cup shredded Parmesean Cheese
In skillet, melt butter, add garlic and saute lightly for about 1 minute. Add spaghetti squash, toss to coat. Add parsley and cheese. Serve
Serves 4 (1/2 cup serving size)
Per Serving: 93 Cal (59% from Fat, 14% from Protein, 28% from Carb); 3 g Protein; 6 g Tot Fat; 4 g Sat Fat; 2 g Mono Fat; 7 g Carb; 1 g Fiber; 2 g Sugar; 97 mg Calcium; 1 mg Iron; 142 mg Sodium; 17 mg Cholesterol
1/2 cup is alot. I actually had about 1/3 cup with 9 shrimp and was good to go!
After making this, I'm coming up with all kinds of ideas, and I will gladly share.....
