I am almost 3 years out.   Fish is one of my favorite forms of protein.  I don't eat red meat or pork.  I do eat  a lot of fish and chicken.   Fish goes down very nicely.  It is so soft, that is is one of the first proteins I tried as a post op meal.  One of my favorite meals now is fish, brown rice and some stir fried veggies.   You might wanna skip the rice for now, but. just know that fish is a great sorce of protein post VSG!

Can't help you with the fish issue as I'm vegan but I have no problem getting my protein in. I average 700 cal, 65 protein, 40-60 carbs and 20 fats per day.

Interesting. How does a vegan gets protein? What foods you eat usually for protein?

Beans, tofu, seitan, tempeh, gardenburger/morningstar farms/bocaburger "meats", soy, whole grains, textured vegetable protein. There is really a lot out there. Just about everything that is food except sugar maybe has some protein. I don't worry too much about low carbing it but actually I don't seem to be eating more carbs than those who do.
