Protein Pancakes

 Okay so pancakes are not low carb, never will be.  But for the last 4 days I've made myself something differen to eat from my family and I've had a horrible day and just didn't want to do it again.  I was doing breakfast for dinner (it's a fav at our house)  I waited until there was just enough batter to make 2 4" pancakes and then added a half a scoop of my vanilla protein.  I didn't have a clue if it would work or not but it did.  It was a slightly weird texture, but the taste was nice and I didn't need syrup because of the vanilla flavor.  had those 2 pancakes and 2 eggs.  Nice lot of protein in the whole thing.

Anyone else add protein mix to odd things?

 Well, yes.. but unfortunatly found out that heat is not good for protein because it changes the composition of it at high temperatures. Protein tends to "coagulate" and get lumpy when heated, also. Maybe try powdered skim milk instead and some additional vanilla flavor! Best luck to you!

 I was worried about that, too.  I figured if it didn't work I just wouldn't eat a pancake.  But I don't know if it is because it was on the heat for such a short amount of time it didn't seem to coagulate or anything.  Hopefully it wasn't just dumb luck, but it probably was.

For what it's worth, I don't think coagulating the protein with heatdestroys its nutritional value- it's like cooking an egg - the texture changes, but it is still protein...

We love pancakes and I have worked to come up with a recipe that meets my post-WLS needs and still tastes yummy. My daughter loves these and now prefers them to heavier traditional pancakes,

Here's the recipe... one of thes usually fills me up...

Multigrain Protein Pancakes (Yields 18 medium pancakes - about 6 regular person servings, 9-18 WLS person servings)

Ingredients
1/3 cup Stone-Ground whole wheat flour
1/3 cup Soy flour
1/3 cup corn meal
1/2 cup almond meal
1/2 tsp salt
1/2 tsp baking powder
3/4 tsp baking soda
Sugar Free equivalent of 2 Tsp sugar (I used some sugar twin and some splenda)

Whisk dry ingredients together

3 eggs
2 cups greek yogurt
1 tsp vanilla
2 - 4 Tbs melted butter or oil (Optional)
1/2 cup almond or soy milk, more if mixture seems too stiff

Add wet ingredients to dry ingredients and mix well with whisk.

Proceed in the usual fashion and cook your pancakes over medium heat.

These are no doubt carbier than my usual meals - but pancakes of any type are a once a week treat for me. I do start the day with a cup of protein coffee (27g protein), so this meal works well in terms of my overall stats for the day.

Someone on here put up a recipe for protein pancakes and I've been making them since.

1/2 cup ricotta 
2 eggs
1 scoop vanilla protein powder
1/2 tsp of baking powder
1/8 tsp salt
mix wet ingredients first then add the rest and mix well.
measure out 1 tbs at a time to make silver doller pancakes makes 20 of them and 4 servings. The only carbs are from the protein powder.

cal. 140 carbs 3 fat 8 protein 15
Also depends on the powder you use and the type of ricotta.

You could substitute cottage cheese or greek yogurt too.
