Oh, forgot about hummus! Loved it, ate it very frequently!
I wasn't allowed any meats till 30days, but steamed fish was the first, and easiest.. along with rare tenderloin, and shrimp..
Making your own strong chicken stock pre-op & freezing it- highly recommend it! Add unflavored protein powder and spice, and it will get you past the nasty sweet-shake phase during liquids. Unjury makes a Chicken flavored protein powder, it's ok, but super high in sodium.. I had better luck with my stock & Nectar Unflavored..

I didn't worry about carbs until I was released for all foods. (I did use SF drinks, though.) I felt like, during the mushy/puree stage, it's more about re-introducing foods to my poor tender sleeve. So I did eat things like refried beans, mashed potatoes, and stuff like that during that stage. And as previous posters have said, we're eating so little during this stage, it hardly matters. I suppose it would be different if we were squirting Hershey's Chocolate down our throats all day. (Don't do that, LOL!)
Once I "graduated," though, it was low carb all the way. I didn't and don't worry too much about fats, so I use full-fat mayo, cheeses, creams, and sour cream. I do use 2% cottage cheese, greek yogurt, and milk, probably more out of habit than anything else.
I never counted the calories or carbs associated with my vitamins, calcium supplements, etc., figuring they were doing much more good than harm. And at 600-800 calories, I figured I needed the calories for actual food.
