Want to know how much I can eat 2.5 years out?

 I know one of my biggest concerns going into surgery was how it would be a few years later....well, 2.5 years out Im going to show you! I posted 2 videos with pictures I took over the last 6 months of what (and how much) I eat now.

Thank you so much for sharing... can you tell me though, why is everything "gluten free?" Do you have a gluten allergy? Or, is that just your take on healthier carbs? I confess, I don't know enough about gluten and gluten-free items (except I think they are more expensive!), but just wondering why a "whole wheat" or "low carb" option wouldn't also work.

Also, how many carbs/day and calories/day do you maintain at??

 I was experiencing weird symptoms....drops in blood sugar....talking in sleep....muscle fatigue....always tired....FREEZING fingers and toes....and decided to cut out gluten....they all went away! So Id call in a "gluten sensitivity." If you go back to my youtube page I have a video called "what gluten was doing to me" from a few months back that explains what it is. I still occasionally eat it - but find that I feel much much better when I leave it alone.

I dont track....but the few times I randomly wrote it down....back in June I tracked it for a DR:  Calories are in blue and the percentage is how much I ate versus what the program says I should eat per day. 

Tue 21st: 1749 97%
fat: 74.41g | protein: 87.81g | carbs: 190.59g
Add entry -
Mon 20th: 1461 81%
fat: 40.20g | protein: 72.73g | carbs: 205.90g
Add entry -
Sat 18th: 1784 99%
fat: 51.58g | protein: 104.76g | carbs: 225.57g


People get freaked out by my carbs....but the truth is that its the preferred burning source for many of our bodies systems. Thats why people feel all funny when they eat low carb. I think its important to change the TYPE of carb....not eating processed white bread, but eating fruits and veggies, etc.

Loved your videos! It was very interesting to see what you eat now at 2 & 1/2 years out. Also, I have never had fish with capers--and I want to try it now! Thanks so much for sharing :)

I normally also add some lemon and olive oil to that fish/caper mix :)
