What were the easiest proteins to EAT 3 to 4 weeks post op

Have you tried eggs in 'custard'?....you can make them savory or sweet...sort of like pudding.  Made with milk, eggs, a bit of corn starch, sweetner or savory flavors of choice, you may find you can eat eggs again.

Best wishes on this journey....I'll enjoy the eggs for you until you can.  It's funny...my cholesterol is normal even with all the eggs I eat!

String cheese, greek yogurt, cottage cheese and tuna.

Taco meat ground up if needed mix in some sour cream and melt a bit of cheddar on top. Yum!

Chicken legs roasted
Crab legs
Shrimp
Tuna salad ( tiny bits of mayo, mustard, pickle juice so there's no pickle to digest)
I have done well with ground beef too, it has to be cooked slowly though so its not tough
Had some turkey and ham on Christmas too

I've been really fortunate to not have anything go down badly.

Being a day ahead of you.... I've already tried a scrambled egg. Loved it, but couldn't finish one egg. Greek yogurt is the easiest still for me, but I tried making turkey roll ups yesterday and that was an excellent choice for me. I was able to eat about 1 1/2 oz.

Greek yogurt sauce makes an excellent spread for the turkey roll ups and makes the turkey that much moister. I used Oscar Meyer Smoked Turkey Breast slices and the yogurt sauce I make. So much lighter in my tummy than the egg was.

I'm thinking of trying chili tonight for supper. MMMMM.....

I only use Greek Yogurt for two reasons: First, it will have a gram of protein per serving and second, it sets up like sour cream for excellent spread-a-bility! 

I look for low sodium dressing or dip packets at the grocery store. Some stores are now carrying organic spice packets (which I tend to like better - far less sodium and generally no sugar at all). I mix the packet with one cup of Greek Yogurt and put it back in the fridge. If it's too thick I thin it out with some almond milk (10 calories per 1/4 cup).
1 TBS of the sauce is 7 calories, 1.5 grams protein and 1/2 a carb. (Carb count can go up depending on the seasoning you use.)

I've been using organic ranch this week, but have really enjoyed chipotle ranch, organic onion, and a low sodium italian dressing packet.
