My Chili Recipe

I know a lot of us love chili.  There are so many ways to make it.  Here's my personal version of VSG friendly chili.

Step 1:
1 pound 90/10 ground beef
1/2 Tbs olive oil
1/2 Tbs dried minced onion
*In a large saucepan, add ingredients together over medium heat until beef is lightly browned.

Step 2:
Add in:
1/2 can tomato sauce (4 oz)
1/2 can beef broth
*Cook covered over medium-low for 15 minutes.

Step 3:
Add in:
1 Tbs chili powder
1/2 Tbs hot Mexican chili powder
1/4 tsp salt
1/4 Tbs ground cumin
1/4 tsp cayenne pepper
1/4 tsp black pepper
1 chicken bouillon granule
*Cook covered over low for 30 minutes.

Step 4:
Add in:
1 Tbs chili powder
1/2 tsp paprika
1/4 Tbs ground cumin
1 can chili-ready diced tomatoes (or regular diced tomatoes)
1/2 can fire roasted diced tomatoes (or regular diced tomatoes)
*Cook covered over low for 15 minutes.  You can add more beef broth at this point if you want it thinner.

Stats: Entire recipe equals 1140 calories, 106g protein, 56g carbs, 50g fat.  If you split it into 8 servings, each serving would be approx 1 cup for 142 calories, 13g protein, 7g carbs, 6g fat.  Any add-ins like beans or noodles would up calories and carbs by quite a bit, so use caution.  Conversely, you could drop some of the tomatoes to lower the carbs.  I like to top mine with shredded cheese for extra protein.

Those numbers are really good. Do you know the sodium per serving number?

Have you tried cooking with Mrs. Dash salt substitutes? I use it sometimes on my food at home but not in cooking.

Chili is one of my favorite foods. Thanks for posting your recipe. If it is too much in sodium for me, I might be able to tweak it with low/no sodium products.

I am not sure about the sodium.  I bet you could make a few easy substitutions and lower it some.

Do you eat a 1 cup serving at a time?

Depends on how thin it is and how I feel.  Today I ate 3/4 cup and was satisfied so I stopped.  I could have eaten more but didn't want to go to "full" but rather satisfied.
