If you are eating 80g+ of protein and staying under 800 calories a day, your carbs will naturally stay in line.  Eat protein first, don't worry about fat, and the carbs will take care of themselves. 

Edited to add: 

I agree that you should log your food.  It's very important.  Studies show that people who don't log their food underestimate calories by about 50%.  You need to know how much protein you're really getting and how many calories.
