Fabulous photo---and a great idea.
I have to host (make) 1 breakfast for a girls' week vacation soon.

But mine won't be nearly as pretty---I'll have to flip those eggs for a few minutes!
Maybe I can sprinkle to little parsley or something to decorate!

This looks great to me. I had something very similar for dinner at one of my favorite Italian restaurants this weekend. It was carpaccio, one egg, arugula, Parmesan cheese, and capers. It was pretty amazing stuff. I had it with a beautiful dry Amarone wine from Masi Amarone Della Valpolicella Mazzano, 1999. Life could be worse.
