Egg Muffins......Delish!

Egg Muffins!!

I remember someone posting about egg muffins so I made my own this morning and it was soo quick and perfect for someone like me that has an extremely busy schedule. Before I showered this morning,

I ran to the kitchen, scrambled one egg, threw in bits of turkey, black olives and topped with fat free cheese in a muffin pan.

Baked it at 350 until I was done getting dressed about 20-25 mins, put it in a small container and enjoyed at work. My co-workers kept asking what smells soo good??

Yummy!

I was making egg muffins then my oven broke.  I was so sad.  Luckily though Saturday I got a new stove sooo back to baking for me.

I am so lame because I haven't tried these yet!!! I want to make some with crumbled bacon...yum!!!! Thanks for the reminder.

I am sitting in my office at work eating one right now! Didn't scramble my egg first, but egg with turkey sausage crumbles, a little chopped onion and bell pepper, and some red pepper flakes. Really good and very filling and mine came to 118 calories and 11.8 grams of protein! I make 6 at a time and freeze them, grab one as I head out and microwave when I get here.

I make mine with very diced ham or turkey, spinach, mushrooms, onion, garlic, and whatever kind of cheese I'm in the mood for. Makes 6-9 keep in a container in the fridge, and warm up whenever breakfast lunch or dinner.

I will definitely have to try that once I'm at the stage where I can eat that type of food.  Sounds yummy!
