A Little Weird Sounding, but Tasty!

Thanks everyone for all the great ideas.  Lately, I feel like the mad scientist in my kitchen.  I just want flavorful stuff to eat and if I can give it an ethnic kick, all the better.  I'll save the Creole and Cajun stuff for a little further along, but for tomorrow's meals, my Italian heritage is coming down like a big old hunk of Scamorza!  Does everyone else get this crazy?  I always cooked as though for an army and now, a quarter cup of anything and I'm satisfied, so this is strange for me.  I'm sure everyone goes this this.
