Even though your surgeon does not require it, I really really encourage you to cut your carbs down and start tracking food right now.  First, it's good to get in the habit of tracking, which you have to do after surgery so you know you get in enough protein.  Second, the way you'll eat for a while post-op is low-carb, so it's good to get that under control ahead of time to ease the transition.

I only watched my carbs.  I did not count fat or calories at all, for about 2 months pre-op, and I lost 12 lbs.  Easiest 12 lbs ever--and I was doing this during the holidays.  If I can do it, you can do it (I was not perfect, but I was MOSTLY perfect).  I did not feel deprived--I ate whatever else I wanted.

Also, and this was a big thing for me--losing weight will help shrink your liver and make the surgery easier to perform.  That was a HUGE motivating factor for me.

I understand and agree about the fatty liver. I had the same surgeon who is doing her surgery. He told me to do the 2 week pre-op diet. Which I did and cheated a little but still lost 14lbs. He said that a 10lb weight loss helps tremendously and anything more is a plus. He didn't tell you to do the 2 week pre-op so evidently he doesn't think you need to loose those extra pounds before surgery. Just don't gain any weight.
