Polenta

I took a tube of polenta, sliced it as thin as I could an then baked it for a little bit @350.  Then topped it with spaghetti sauce and a tiny sprinkle of cheese.  Back into the oven.  Voila!!  Mini pizza that satisfied me and one that my partner with celiac disease could eat.

Polenta is delicious, but not the kind that comes in the tube, so you won't be missing anything.  If you make it from scratch you can add eggs cheese and milk to increase the protein, but it is loaded with carbs and calories no matter how you fix it.

If your mom wants to make something that might be soothing to you when you get to the mushy stage and are still recovering, mashed potatoes or grits might do the trick.  You won't be able to each much and they are good for a recovering sleeved tummy, but only until you can eat solid food.

Thank you all! I am going to pass on the polenta. I thanked her for thinking of me and just trying new things for me, but with my WL I don't want to interrupt it! She understood, although a little sad. Typical italian moms! I am encouraging her to make it for the rest of the family though, I even offered to help AND look up recipes for her. I can cook something and not eat it- doesn't bother me THANKFULLY! So, I will be nice back and help her.
