Great article, and a summary of a forthcoming book - which I will read. It does remind me quite a bit of:
"The End of Overeating: Taking Control of the Insatiable American Appetite"
I think the issue here is that processed food is manipulated to taste super-naturally good and to push the pleasure/reward buttons in our brain. We should be VERY wary of processed food for this reason alone. The box tells us the carbs/fat/protein, etc. But these foods are highly engineered to by stimulating to your pleasure centers. They are finely honed and crafted to be irresistible - not because it's an evil plot - but because business exists to sell stuff and businesses optimize their products to sell more of that stuff.
As someone who needs to be ultra-vigilant I feel the need to avoid processed and restaurant food as often as possible because of this engineering.
