Turkey Tofu Stuffed Peppers

Something new I came up with.  Take a package of firm tofu.  Cut into 1/2" cube and sauté it in a little cooking spray in a non stock pan with 1 tbsp each of low sodium soy and Worcester sauce.  Add that to 1lb of lean ground turkey along with 1 egg, salt, pepper, garlic powder and onion powder to taste ( about 1/2 teaspoon each). Mix well being sure to mush up the sauted tofu as much as possible.  It's best to get in there with your hands.  Add one more tbsp each of the soy and Worcester sauce.  Add 4 medium sliced mushrooms. Cut the top off of 6 medium to large bell peppers.  Clean all the seeds out of the peppers and stuff them with the meat mixture. Bake in a 9 x 12 backing dish uncovered with cooking spray at 375 degrees for 45 -50 minutes. Add a tablespoon of your favorite tomato sauce to the top of each stuffed pepper and return them to the oven for another 10 mins.  Here are the numbers per serving 1 pepper - although I could only eat half of one. 

Cals. 248, Fat 11.4 gm, Sodium 266 mg, Carbs 8.7 gm, Fiber 2.2 gm, Protein 28.2 gm. 

Sorry, no fancy pics but it was something different and pretty tasty. The whole family liked it!

This recipe is a God Send.  I am allergic to lots of things and lots of protein makes me ill, but I am going to try this!  THANK YOU!
