Any thoughts on how I should use this gift certificate?

My employer sent me a $200 gift certificate to this organization:

I love the idea behind it, but I'm trying to figure out how I can best use it. My thoughts so far:
1. sign up for breakfast and lunch service - but the sample menu seems awfully high in carbs for me
2. sign up for dinner service - but then what does the rest of the family eat? Perhaps hubby could have these items for lunches this way?
3. sign up for a consultation and 2 followups with their dietician - i need to see if I can get someone experienced in WLS patients
Hubby is eating whole foods with low sodium and no red meat. I am, of course, on high protein, 800 cals/day max, regular diet and tolerating everything.
Anybody used a service like this post operatively? What did you get? Any ideas? I have never done any sort of meal plan before, so this is new to me.

good idea. It expires in June of 2014, which might be right about maintenance time.

It's an interesting dilemma. Even the Diabetic 1200 looks carby.
Maybe you could sell the card for something less than its face value and use the money in some other way?
