bored with breakfast

I don't think I saw anyone mention Greek yogurt or cottage cheese.  The yogurt can be mixed with flavored protein powder and maybe some Fiber One or similar cereal.  I've seen people talk about mixing the cottage cheese with scallions and seasoning for a more savory feeling.  I've kind of settled on the protein coffee, myself.............then I don't violate the eating-drinking-tme rule.  Oh, and I'm usually consuming it around 6 am, and am ready for a protein-based snack around 10.

I have eaten chicken salad for breakfast for the last year or so........and I'm sure I have feathers growing somewhere on my body to prove it.

My favorite right now is scrambled egg with cheese and jalapenos on one piece of wheat toast.

Thanks for posting this topic, Laurie. I am kind of in the same boat. Bored with breakfast (and not a fan of eating early) and not a fan of eggs (might try hard boiled). Lots of good stuff here.

Come to think of it, I have always had the opinion that there is no need to have "breakfast" food for breakfast. So anything you'd have for lunch or dinner, have for breakfast!

I can't really add anything different here...I'm like Keith,
I get do a protein shake in the AM to give me a protein boost..
I do 1 1\2 scoops with 1/2 cup milk 1\2 cup water and ice cubes...gives me 40g protein right away...When I first get up I take my opmerprosil ..drink 2 -6 glasses of water depending on the day and don't have my shake til about 10am..cannot do leftovers for breakfast and eggs to me are a waste of time given there low protein content, if I don't do the protein shake in the AM I feel I'm playing catchup all day..
Case and point went to breakfast w/the hubby yesterday, had 1/2 an omelet 1 piece of bacon...about 1.5 oz of salmon when I got kinda hungry again, not until 3pm and I think I only ate it cause I knew I was backed up on my protein and then the other 1/2 omelet for dinner...even w/a protein shake that nite, that I forced cause I wasn't hungry I only reached 64g of protein and it irked me to no end...
I think for me protein shakes will always be in my life and I'm OK with that...

I tried something new today which was really good.  it's a little carby, but you could replace the skim milk with almond milk.

1/4 cup dry oatmeal

1 cup milk

some apple

some walnuts

cook slowly for 15 minutes till nice and fluffy

Stir in a raw egg, cook a little longer

Add some cinnamon

i was delicious, but made quite a large volume, i think if i make it again i will l put in 2 eggs and split it in half and eat for 2 breakfasts, you could sub whatever fruit you want for the apple

I also make scrambled eggs, with some hummus stirred in, then roll it up in a piece of deli ham or turkey, like a wrap, you could put some sauteed veggies in also

I've been on a cottage cheese kick.  I usually do 3 ozs with 1 oz greek yogurt and either torani or stevia, a ton of pumpkin pie spice, and some vanilla protein powder if I need more protein (usually I don't - but I get more than I need most days).

Y'all are wonderful. Thanks so much!

Feeling inspired, I made a low carb quesadilla this am - a Tomaro's whole grain wrap and used a slice of mozzarella cheese, plus 1/4 cup shredded cheddar. I could only eat 3/4 of it with nutritional info (173 cal/ 8 carb /12 fat /15 protein).

Then, I made some fried cheese - same thing without the wrap - just put the cheese in the pan and cooked till brown n bubbly. We will see how that is.

Thanks for the responses!

Laurie
