Ok, hubster wandered in and snagged one - then a second after his first bite:

1 scoop vanilla whey (Kaizen, 150 calories, 35g protein)
1/4 c WW flour
1/2 tsp baking powder
1 tsp cinnamon

1 egg
1/4 c 1% milk
1/4 c cooked carrots
2 TBSP sf pumpkin spice syrup
1 TBSP oil

Mix dry ingredients in bowl. Blast wet ingredients in blender, then mix into dry ingredients. Made into 13 mini cupcakes each has 38 calories, 1.6g fat, 2.1g carb, .4g fibre and 3.7g protein.

Not too shabby.

Nice!  I will try this once I can convince my people to pull down the pie maker.  Cool beans that the ratio is holding on that recipe too!

Oh, I just realized you said sf lemon pudding... that does sound fantastic. I will be making a batch of that up by the weekend.  (I had read this earlier and my brain assumed it was sf Torani syrup- need to read more carefully!)

I just realized after your post too that I would do a yogurt parfait.  FF Fage, sf vanilla Torani, a litte fresh berries layered in, and instead of granola there is a product calle dixie soy nutletttes- all the crunch, and pretty much pure protein.  Yum- that is going on the list too :)

Cheesecake pudding is MAGIC. I'm having a really hard time choking down my protein shakes and I feel like crap, but I'm nibbling on some pudding now with extra protein powder in it and it's not so bad :)

I used to put unflavored protein powder in my greek yogurt, chocolate protein powder in my coffee and hot chocolate... lots of ways to sneak it in.  Keep trying!

Greek yogurt jello is another way to slip in some protein. I use my Keurig (lazy, I know) and put 8 oz ho****er into my 2 cup measuring cup, stir in a packet of sf jello, then add Greek yogurt until it hits the 2 cup mark. Stir well and pour into 1/2 cup containers. Each has 45 calories and 6g protein. Lemon is my favourite.

This is such perfect timing for me. I am still in purée/soft foods stage, but we're having a Christmas family get together this weekend at our house. I was kind of feeling ready to just hide the whole time because the sweets are what I'll feel the most deprived of. I am going to try to make a low carb low cal version of my mom's buffalo chicken dip (puréed) and maybe the cheesecake pudding!  All the holiday food stuff has been hard on me this year. The kids and my mom have been baking cookies, and baking cookies, building gingerbread houses, and baking cookies... Every December, my mom goes all out making delicious things like fudge, cookies, sausage balls, and I'm feeling deprived. I'm not sure I'd even like the sweet stuff anymore, but this gives me options. I'm also going to make some low carb, low cal turkey sausage balls once I can eat real food. I found a recipe that I'm super excited to try!

The cheesecake minus the protein cookie crumble would be a fantastic fit for your phase-

I know! And after next week I move on to the next phase, so maybe I can have the crumble then (if I'm tolerant)!
