Shelly's Baked Ricotta
8 oz of Ricotta Cheese
1/2 cup grated Parmesan
1 large Egg, beaten
1 teaspoon Italian Seasoning
salt & pepper to taste
1/2 cup Marinara Sauce
1/2 cup shredded Mozzarella Cheese
Mix ricotta cheese, parmesan, beaten egg, seasonings together and place in a oven proof dish. Pour marinara on top and top with mozzarella cheese. Bake it in the oven @ 450 for about 20-25 minutes (best) or nuke it till hot and bubbly. I usually made it first in the oven and heated the leftovers in the microwave.
I hear you!!! I went to my surgery group today for my four week check up. So excited cuz I get to eat a soft diet....that means I don't have to eat puréed chicken...I can mix it myself! Can also have a salad.....ice berg lettuce only. Still only can eat a small amount so whatever I can eat will be 2-4 ounces.
So my friend, in a couple of weeks you can mix your own chicken salad!
Added note: I was upset two weeks ago because I hadn't lost any weight. Today when I weighed in, I had lost 20 pounds in two weeks. Fantastic....since I cannot walk very well. We'll...that's a another story.
