What is your favorite salad?

I am curious what your favorite salad is.  I am in a bit of a rut, although I do have a new favorite.  We roast root vegetables and place on a layer of arugula, put small plops of warm goat cheese disbursed througouth, another layer of arugula with some more warm goat cheese and fresh cut veggies on top.  Finally, we sprinkle some warm lentils (Trader Joes).  Still need to work on a better dressing, but for now a lite balsamic is doing the job.  Awesome salad.  I know for some the root veggies might be a bit carby, but for maintence it is brilliant.  So, how about you- what is your favorite salad?

I've been doing spinach with chicken, strawberries, nuts, feta or blue cheese with light balsamic.  I also love kale with purple cabbage, edamame, nuts, blueberries, shredded carrots with light Italian.

I have a salad most every day, and cycle between

a southwestern style salad - leftover chicken, steak or ham tossed in a bit of BBQ sauce, chopped spinach, avo, tomato, corn & black beans, mini bell pepper, green onion, shredded carrot, snow peas and maybe a bit of broccoli or green bean (or whatever else is in the veg drawer) with cheddar and pepper jack cheese and a ranch or cilantro dressing, or,

a cobb salad - chopped spinach, avo, tomato, hard boiled egg, turkey bacon, leftover chicken or ham, swiss cheese and sometimes some shredded carrot and green onion with a caesar, thousand island or parmesan ranch dressing.

Lately, we've had some pretty good grapefruit around so I have added a citrus salad to the cycle - grapefruit, spinach, avo, walnuts or pecans, leftover chicken, swiss cheese and maybe a small tangerine if I have one.

Your salads all sound great.  I was playing around with making a salad dressing, and I came up with this:

1/4 cup tahini

2 garlic cloves

juice of 2 lemons

1/4 cup nutritional yeast

1 tsp salt

water added to desired consistency

It is really tangy and delicious.  I have it several times a week.  I eat salads twice a day.

I am a huge tahini fan, and this sounds awesome.  I have a question though... is the yeast you use to make bread the same thing as nutriional yeast?

No, nutritional yeast is VERY different.  It tastes kind of cheesy.  You can find it at any health food store.

various greens including butter lettuce, iceberg, spinach, arugula etc. with sun dried and fresh cherry tomatoes, basil, Roquefort cheese crumbled, walnuts, artichoke hearts, cucumbers, avocado and radishes with fresh dill and a sprinkle of olive oil and salt. I sometimes throw in chicken or steak cut up if I have any left over or shrimp. YUMMMM

Well, I'm not eating salads again yet, but...

Marinated mushrooms, peppers and olives, fresh mozzarella cheese, garbanzo beans, and a little meat (chicken, bits of salami, pepperoni) scattered over a bed of deep green veggies and homemade Italian dressing.

No wonder I was so fat, huh?
