Coconut Flour
I have some coconut flour. I've used it from time to time in little spoonfuls here and there because I'm allergic to wheat, but definitely not in the quantities that the Paleo crowd goes for... I mean just as a thickener on occasion. I made my niece a "mug brownie" in the microwave using it, and had a bite and it tasted very good, but I was afraid to have more than just a nibble. Calories, calories! That stuff is loaded with fat! It doesn't taste bad to me, but it can ruin the flavor you're going for, especially in stuff like gravy. I'm researching different (low carb) thickeners I can use instead. I have read that oat fiber does a decent job and it's lower in calories.
