Anything special for Sunday Dinner?

Well, I'm starting the day easy so I can plan for a good dinner. I hate to waste food. We had company the other night and I made a big pot of green beans with a few red new potatos. It was really good. Now I have a 2 pound bag of new potatos and I don't want to throw them away. I also like to make a good dinner on Sunday. This is an old Southern tradition that I grew up with and still like to do. First I'm going to boil all the potatos left in the bag. Then I think I will make a smal bowl of potato salad and bake a couple of 'extra crispy' boneless skinless chicken breasts for dinner. I will probably slice a big tomato for a veggie. Dougie would rather have corn on the cob....BUT....not with potato salad. Waaay too much carbs....even if they ARE complex carbs. I'll freeze the rest of the potatos to use another time. Maybe make some cheesy potato soup. We rarely have potatos. So I won't feel guilty. They don't make me crave other carbs. I only do that when I eat white bread. So I hope your Sunday is going well.....I commit to walking or riding my bike for an hour today...... Hugs from the beach Charlie

Hi Charlie, yummy your dinner sounds great. I'm going to have leftovers again, lol. When DH is working, there isn't much cooking going on around the house. Dinner will be roasted chicken breast and eggplant with onions, tomato sauce and cheese. It sure is hot here in Texas today, trying to stay indoors and feel better. Dana...if you are exhasted....make sure you are getting enough B12. When mine is low, I get sooo tired. I sleep late and start to feel bad. So I take shots...and sometimes use sublinqual as a backup.....Its hot here too...but I gotta get outside before the rain starts. I am sooooo lazy. Hugs Charlie

Hey, Charlie! Rich is working so I'm solo. We try to cook on the weekends to get us several days into the week. Wish we had a big freezer. We made lasagna slop this morning - lasagna sans pasta. So that is in the fridge. I've got a bacon and cheese crustless quiche in the oven. And I made an apple crisp - just apples, almond flour, splenda, cinnamon and lemon juice topped with a bit of oatmeal, sliced almonds, butter, splenda and more cinnamon. Carbs so the quantity of that will be small but it's good stuff. Not sure what I'll eat of it. Almost time for my afternoon protein shake! Kathy

I love apple crisp. But then you could roll road apples in sugar and I'd like em..... I'm about to go to the grocery store....I'm working on a recipe for orange-coconut macaroons for poker tomorrow night...I have an idea....the recipe calls for 3/4 cup of granulated sugar....you have to process the sugar with the orange peel for 3 minutes...so what I'm thinking is using 1/2 cup of Splenda and 1/2 cup of dry dessicated coconut instead...that would give it volume and sweet at the same time. I have the maltitol sugar and I know it would work much better...but that stuff just sets me free....and the old boys I play poker with are 'gassy' enough as it is...LOL. I've only had 2 protein shakes so far today, one EAS and one AcheiveOne....and I rode my bike steady for an hour and danced up the parking garage for another 10 mintues....so I'm pumped. Now if I can just not nibble all evening..... Hugs Charlie

I do 3 shakes a day (scoop and a half of protein) if I don't go to the gym. I do an extra if I go to the gym. I'll be gyming first thing in the morning... as usual. Got a shorter week this week. We are off on Friday... traveling to NY. I cannot do sugar or so I believe. I seem to dump on incidental stuff so I won't go near it. Splenda works well for me. Sugar alcohols in small quantities are okay - bigger quantites... I'm uncomfortable and so is hubby. The macaroons sound great. Kathy

Kathy--Your picture shocked me when it changed while I was reading the board. What a difference! How do you make you pasta-less lasagna? I have made something like lasagna using portabello mushrooms as a base. Then I fill it with the skim ricotta, fresh parm and egg mixture--just like a normal lasagna. I top it with the fresh mozerrella and fresh basil and some spagetti sauce. My family says this is my most flavorful post wls recipe. Oh yes--don't forget to mix in some garlic too.

Hey, Lynda! We brown meat (beef or turkey) and mix with tomato sauce. Then we have sauteed mushrooms (sauteed in olive oil). Then we thaw and drain chopped spinach. Then we mix ricotta with parm cheese, shredded mozarella and an egg or two. Then we just make layers of these things. Top with shredded mozarella and bake at 350 degrees for 45 min or until browned at the edges and bubbly. It will be a bit runny day 1 but the next day it holds together really well as if the noodles were there. Yea, the picture is a shocker. LOL! My before picture looks like I ate kittens for breakfast. Oh, c'mon now... that is a gruesome picture. I have no idea why I looked so... I don't even know the word for it. Just a nasty picture. We took it the day before Rich had his surgery. His is just as horrible. We both look like we could have a number on a plackerd under our faces and be seen on America's Most Wanted. It has nothing to do with size... simply the expressions. I keep wondering... did we feel that bad or what? I guess so. Kathy
