I am not kathy but I have made a pasta - less lasagna by cutting very thin length wise slices of zucchini, yellow squash and eggplant and using those for noodles. I am not a diehard carb cutter, but this is very good and gets in some extra veggies into certain people I live with who dont eat enough of them.

hey Charlie girl!! Good ole filet mignon and spinich salad here...easy quick and easy to eat!!!! My Sunday has/and is busy. Lots of running around getting the rest of the stuff I need to complete the redoing my master bedroom and bath...OMG what work!!!! I need to exercise to relax!!!

Filet is about the only steak that hasn't made me puke puke puke. I loooove it. I also can't eat it leftover..... I was gonna freeze the 'extra' taters.....but when I got home from the health food store just now...SOMEONE here at half my boiled taters....so I have just enough to make a small bowl of potato salad. Timer just went off....chicken is ready. Gotta go eat... Hugs from the beach Charlie

Charlie, I'm cooking one of my Mama's recipes that is a family favorite, Mustard Pork Chops with rice. For sides I'm serving steamed mixed veggies (I love those new "steamer" bags) and potato salad. For desert we'll have fresh fruit salad (watermelon, pineapple, honeydew melon & strawberries) or SF Cheesecake Pudding Pie. Yummy! Yummy! Vickie J.

Charlie, Come on up!! I've got plenty! I just can't seem to get the hang of cooking for 2. I still cook for a "family" and then we eat leftovers a time or two. Of course, if our 23 year old son gets into the leftovers when he gets home from work I'm lucky if I have enough left my lunch!! Vickie J.

It is tough to cook for 2. My husband was 6'5" and ate like a lumberjack....so I cooked a lot....Doug doesn't do that.....and I find it hard to cook for us now without cooking a boatload at a time. But I am getting better.... Why is it that Publix doesn't sell chicken breasts in packs of 2...I can oly find packs of 3.....hmmmmm.....maybe I'll talk to the meat manager..... Hugs Charlie
