--6 little turkey meatballs and 1/2 cup caulitators (cauliflower whizzed w/ff ricotta or cream cheese)  --1 tab. soynut butter or sunflower nut butter, 1 tab. sf jam on a rice cake or other whole-grain type cake (spelt, kamut, etc.) --1/2 cup nf cottage cheese mixed with 1 tab. sf jam --1/2 cup 0% fage yogurt mixed with 1/2 cup kashi go lean --1 mini meatloaf or quiche bite (muffin sized) with 1/2 cup veggies (usually the caulitators...they are a comfort-food go-to) sometimes even green veggies --1/2 cup egg beaters sautee'd with fresh mushrooms, zucchini, red onion an a sprinkle of feta cheese --homemade bran muffin and a lf mozz stick --2 of PK's pumpkin protein muffins and Melissa's 'whip' frosting --1 slice of PK's meat crust pizza and a snack-pack sf puding Those are a few of the things I typically eat...but I tend to be a rut person and go in cycles of eating the same things over and over.  Just my nature. What are PK"s pumpkin muffins ?  I love pumpkin so how do I make these please :)

Desserts  Low Fat  Submitted by DJENSENAK A delish high protein treat, dessert or breakfast. Original recipe provided by PK. 75 Minutes to Prepare and Cook

Ingredients

 
22 Fl oz can pure pumpkin 6 scoops vanilla protein powder (mine has 130 cals, 23 protein per scoop) 12 oz can evaporated skim milk 6 large eggs 3/4 cup sugar twin brown sugar substitute 1 tbsp cinamon 1/2 tsp ginger 1/4 tsp ground cloves 1/4 tsp nutmeg

Pre heat oven to 400. Mix sugar and spices in a small bowl, set aside. Lightly whip 6 eggs in a large bowl, add in pumpkin and mix thoroughly before sprinkling in sugar mix. Blend protein powder and milk in a seperate bowl with a hand mixer, then add to the pumpkin bowl mixing well before filling 18 lightly greased muffin tins. You can also use the paper or foil lined muffin cups. Reduce oven temp and bake at 350 for 10 minutes, reduce heat again to 300 and bake for 40 - 50 minutes. -Slice of meatloaf and some veges -taco meat with lf cheddar cheese, lf sour cream, salsa and baked doritos -grilled chicken breast with barbecue sauce - maybe some veges/rice -skillet made up of scrambled eggs, lf cheese, peppers, onions, and lf ham Hope that helps, Diona

I'm one of those several-times-a-day eaters. These are some of my meals: 1 fried egg on slice of wheat bread (150 cal) 1 Weight Smart oatmeal (160 cal) 1 Weigh****chers mozarella stick w/ 16 Kellogg's bran crackers (190 cal) Fiber One bar or Kashi bar (140 or 150 cal) Spinach w/ turkey and a little cheese and light Italian dressing (150-200 cal) Garden burger (110 cal) and veggies Chik-fil-A roasted chicken sandwich w/ half bread left off Wheat tortilla w/ chicken, black beans, tomatoes inside & cheese on top (baked), LF sour cream & salsa peanut butter and SF jelly on slice of wheat bread
