Hi Carla, your chicken enchiladas sound yummy.  I worked my tail off today cleaning house, didn't drink near enough liquids so after my dinner goes down I'll have to push some water. Good eating day today......I didn't cook but made good choices anyway.  I have lima beans and ham cooking in the crockpot right now to bring to MILs tomorrow.  Not sure what they are planning but I know they are grilling so I suspect it'll be chicken and pork steaks. Edited it add coffee for today, I just prepared me another cup and went to put it in fitday and realized I had no coffee listed......this chick doesn't go a day without coffee, rofl. April 5, 2008

My MIL doesnt cook or cook much.  Every other week when we go I bring the meal.  She loves my cooking so we discuss the menu before we go and I prep it all and take it that day.  Not to hard to do except she has very few cooking things and I am always trying to figure out what to use... lol Wow.. nice day.. protein is great.. and you made it above 1000.  good job... sound like you are right on there. Have a good one Carla

Well, today was totally dedicated to honoring my mother's memory. She would be 70 years old this year and so I walked in the MS walk this morning. And senior-citizen-smoker-hubby did too! My son even walked it, actually ran the last portion of it with a friend of ours who RAN the 10K portion instead of our wimpy 5K walk/saunter. We finished the 3 miles in alittle more than an hour and that was a pretty fair clip. The wind was blowing and it was COLD but we all finished.  My mom died of MS complications back in 1974. This year I felt strong enough to walk it for her. Next year maybe the 10K but I'm so sore from this year, we'll see. But I feel pretty good. And I took a nap too.  This days intake: Breakfast: malto meal, soy protein, soy milk and coffee Second breakfast: 3 egg omelet with chili and cheese, 1 cup cottage cheese (this was such a "slider breakfast" I felt guilty) Lunch: 2 fish tacos (actually one but they give you two tortillas and enough stuffing for two "my" size).  Snack: 2 SF Choco coated Carmel, 1 oz Kettle Popped Corn, 1.5 oz Honey Roasted Peanuts Dinner: 2 beef tacos (homemade) with corn tortillas, jack cheese, ground beef and lettuce.   Dessert: 1/2 a serving of SF Toffee Bits and 12 oz V-8 Juice. AND I may have a bit more but I doubt it. I'm so tired and sore, I think I'll go to bed now and it's only 7:30. Darn that walk made me feel OLD. Totals: Calories: 2242 Fat: 106 Carbs: 198 Protein: 137  Ouch, guys. I'm off to bed and a nice long sleep. Who'd have thunk I'd be hitting the sheets at 7:30 pm at 50 years old. I'm such a whimp.

Dawn, just wondering how long it takes you to eat a meal......for instance the 3 egg omlet and cottage cheese......I am so restricted still I think it would take me over an hour to eat it.......I know you are trying to gain so it's all good.

The omelet and cottage cheese is basically slider food so it takes me about a half hour. Meat and raw veggies takes me alot longer and I can't eat nearly as much. I do set my fork down inbetween but it's really slider food. I've actually done really well protecting my stoma by not drinking liquids with my meals or directly after them.  But cottage cheese, I think even with a really small stoma you should be able to eat that pretty quickly. It's on the soft foods section just after purees. That's why I order it instead of hashed browns or home fried potatoes. Good protein and good calcium..

That is so great.  I knew you could do it.  My mother died from complications of MS as well so I understand you pain.  It is a terrible thing and I know that life for them one tough, painful and stressful.  When the body refuses to do what the mind wants it has to be so frustration.   YOu had a nice day of eatting considering you were walking a lot today and busy all day.  Keep up the good work.. Carla
